Someone told me that real Key Limes are yellow when they are ripe. If you have been eating green "key lime" pies, you may want to check the ingredients. :-)

This is a real Key Lime cheesecake. It was set up above an inclined trough covered in black vinyl. The key limes were impaled on nails driven up through the bottom of the ramp. Buckets of water were poured down the trough, flowing over the key limes, but under the cheesecake itself. In case you haven't guessed: this was done before Photoshop was around.
